If you're in Zone 8B (Texas) nearby us, the ideal time to plant Onion sets is Mid January to Mid February. Planting during this time allows the plants to establish roots before the last frost and take advantage of increasing hours of daylight. For our zone we need to grow "Short Day" onions.
Plant Onion Sets about 3/4" to 1" deep (pointy end up) about 4"-6" apart in full sun. Onions benefit from fertilizing with a balanced 10-10-10 or a 10-20-10 for best bulb development.
Our average last frost date is March 15th, so potatoes should be planted 4-6 weeks before, so late January to Mid February. Cut seed potatoes into chunks with each containing an eye. Some coat with sulfur, but I can say that I don't. Allow the chunks to dry for about a day to help prevent root. Plant each chunk about 3" deep, with eyes pointing up, about 12" apart.
Potatoes are heavy feeders, mix compost in before planting and continue to fertilize thru the growing season.
